Healthy Lunch Idea: Chickpea, Tomato, and Feta Salad

Last week you guys all gave some great ideas for healthy, easy lunches and since we're still on the topic (well I am, at least) I wanted to share a recipe for Chickpea, Tomato, and Feta Salad that user wren posted in the Healthy Recipes Group. Not only is this recipe healthy, but it's also super easy because it requires no cooking.

This refreshing recipe is so simple to make and fills me up. I love to have it for lunch.

1/4 cup canned chickpeas
1/2 cup quartered cherry tomatoes
1/4 cup crumbled feta
1 tbsp. fresh lemon juice
2 tsp. olive oil
1 tsp. dried oregano
1/8 tsp. salt
ground pepper

Rinse and drain chickpeas.
In a bowl, combine chickpeas with tomatoes, feta, lemon juice, olive oil, oregano, salt, and a pinch of pepper.

Serves 1

    Yummy. For myself, I would omit the feta cheese. I don't like cheese anymore.

    Hey this looks great, and to take the dairy out, the Skinny B_tch in the Kitch book has a great vegan feta recipe. You can add that to this salad. Delicious!

    This looks pretty yummy, but I'd use fresh mozzarella instead of feta (Feta's too salty for me).

    Could you PLEASE make this "Healthy Lunch Ideas" a regular feature? Honestly, it would be SO helpful, as Progresso soups tend to get old after awhile. Thanks!

    i agree with Hill82879, I would love to have regular healthy lunch options, that dont take hours to make. also, it would be great if most were vegetarian.. hehe

    I make this all the time, except I don't eat tomatoes so I just omit them! I make this with black beans as well.

    i feel like it might be better with some fresh greens like parsley maybe... but very good!

    hehe, i too got this recipe about a year ago in my everyday cooking magazine and have made it about weekly since then, it's sooo good!

    oh, actually this one is a smidge different, mine didn't have oregano and also has a few crisp pita strips, baked in the oven.

    This is a GREAT recipe! I like to eat it on top of greens. Its perfect and no need for dressing at all. I can't wait to get invited to a pot luck so I can make it for everyone! Good stuff makes me want to share it! lol
